Kale, Sausage, and Kidney Bean Soup



Ingredients:
- 1 pound ground turkey sausage
- 1 bunch Kale, washed and chopped
- 8 oz Kidney Beans, dry (avoid canned items when possible)
- 2 Carrots, chopped
- 1 medium Onion, chopped
- 4 cloves Garlic, minced
- 1 Bay leaf
- 1 tsp Rosemary
- 1 tsp Sea Salt
- 1 tsp black Pepper
- 5 cups Chicken Stock
- 2 cups water
- 2 Tbsp Olive Oil
- 1/2 cup grated Parmesan


   Cook beans as package directs (allow 45 min. to 2 hours for beans to cook), drain, rinse, and set aside. Meanwhile, brown turkey sausage, drain, rinse, and set aside. Coat bottom of pot with olive oil (you will need at least a 4-quart pot) Once heated, add onion, carrot, and garlic. Sauté for 5 minutes over medium heat. Add cooked turkey, beans, and remaining ingredients to the pot. Bring to a boil. Reduce heat and simmer for 15-20 minutes, or until kale is soft. Salt and pepper to taste (if needed). Top with grated parmesan.
